This is a great way to use leftover grilled vegetables.

Didn't make yet but I will use red onion, red pepper, zuke, mushrooms and olives. Grilled or broiled. Also, I think it would be better with a sprinkle of feta instead of swiss. JMHO
This sandwich looks wonderful. One question...The swiss cheese single looks like it was melted but no mention of this being done in the receipe.
Quick and delicious, good for lunch or dinner.
