  • Heat oven to 375°F.
  • Cook mushrooms, onions and broccoli in skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender, stirring occasionally. Remove from heat.
  • Whisk eggs and milk in medium bowl until blended. Stir in vegetable mixture, red peppers and 1/2 cup cheese; pour into pie crust. Place on baking sheet.
  • Bake 35 min. Top with remaining cheese; bake 5 to 10 min. or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.

Serve this easy-to-make any-night quiche with a mixed green salad to round out the meal.

    I couldn't find the cheese they recommend in this recipe but any blend works. Everyone loves this and it's so easy to make.

    I made this for a pot luck at work and everyone loved it -- I added bacon -- yummy!!

    Loved this recipe! I substituted baby zucchini sliced 1/8" thick for the broccoli and added some fresh chives. I used crescent rolls pressed into the bottom of the pie pan instead of the pie crust [since that was what I had at home]. It was very moist and tasty.Everyone loved it, even my husband who says real men don't eat quiche!
