Plastic wrap forms a tight seal and helps keep the dough moist while rising.
It is a Mexican tradition that brings the family together for an after-dinner treat on January 6th of every year. Kings Bread is usually accompanied with hot chocolate which links, once again, the Indians and the Spanish. Kings Bread was characterized for its circular shape but as more guests were invited for the gathering, it started to attain a larger oval shape. The tradition is that whoever finds the inside treat, which is usually a porcelain baby, would automatically be the godfather or godmother of the baby. Therefore, he or she has obligations such as bringing the baby back to the host's house on February 2nd along with a traditional dish.
Combine yeast, warm water, flour and sugar as directed. Place half the dry ingredients in large bowl. Add liquid ingredients; stir with wooden spoon until blended. Add remaining dry ingredients; stir until mixture forms dough. Place on lightly floured surface. Add yeast; mix well. Knead dough 10 to 12 min. or until smooth and elastic, adding more flour if needed. Shape into ball; continue as directed.
Serve bread warm or cool completely before serving.
