  • Heat oven to 400°F.
  • Mix dressing and juice. Place fish in 13x9-inch baking dish; drizzle with 1/2 the dressing mixture. Toss tomatoes and olives with remaining dressing mixture.
  • Bake fish 20 min.; top with tomato mixture and cheese. Bake 5 min. or until cheese is melted and fish flakes easily with fork.
  • Sprinkle with cilantro.

Serving Suggestion

Serve with hot cooked rice and steamed fresh vegetables.

Rated 4 out of 5 by from I made this recipe while my parents were in town visiting. I made this recipe while my parents were in town visiting. Everyone loved it!!! My dad went on and on about it and they especially loved that it was on the healthy side. There was plenty of flavor and it was extremely easy to make. I used frozen tilapia and everything turned out great. I served it with rice and spinach on the side. I followed the recipe exactly and made no changes. A big hit!!

He loved it. In fact, the recipe is so quick and easy -he makes it for us on the nights I don't feel like cooking. Bravo!
