pkg. (10 oz.) LORNA DOONE Shortbread Cookies, coarsely crushed (about 3 cups crumbs), divided

cup PLANTERS Slivered Almonds, toasted, divided

1/2

gal. (2 qt.) vanilla ice cream, softened, divided

Make It

SPRINKLE 1 cup of the crushed cookies and 1/3 cup of the almonds on bottom of 9-inch springform pan; carefully spread half of the ice cream evenly over cookie mixture. Repeat all layers. Top with remaining crushed cookies and almonds; press into ice cream with back of spoon to secure. Cover.

FREEZE at least 4 hours.

REMOVE side of pan. Cut dessert into 16 slices to serve. Store leftover dessert in freezer.

I have made this 3 times for different events and it has been a hit each time. Very easy to make!

This recipe was easy and delicious. I used low fat vanilla ice cream. I put the Lorna Doone's in a plastic bag and used a rolling pin to crumble them. I had the ice cream sitting out while I did this and it was just the right consistency without being too soft, but I was able to scoop it out and spread it over the crumbs.

This cake was absolutely delicious, and very easy. The only thing I did wrong was to let the ice cream melt too much when I softened it, so it didn't look very pretty...but still tasted great. Next time, I won't let it get so soft. Also, I'm going to try low-fat frozen yogurt in place of the ice cream.
