  • Sprinkle 1 cup of the crushed cookies and 1/3 cup of the almonds on bottom of 9-inch springform pan; carefully spread half of the ice cream evenly over cookie mixture. Repeat all layers. Top with remaining crushed cookies and almonds; press into ice cream with back of spoon to secure. Cover.
  • Freeze at least 4 hours.
  • Remove side of pan. Cut dessert into 16 slices to serve. Store leftover dessert in freezer.

How to Toast Nuts

Spread almonds in single layer on baking sheet. Bake at 350°F for 5 to 7 minutes or until lightly toasted.

Rated 5 out of 5 by from This recipe was easy and delicious. This recipe was easy and delicious. I used low fat vanilla ice cream. I put the Lorna Doone's in a plastic bag and used a rolling pin to crumble them. I had the ice cream sitting out while I did this and it was just the right consistency without being too soft, but I was able to scoop it out and spread it over the crumbs.

The only thing I did wrong was to let the ice cream melt too much when I softened it, so it didn't look very pretty...but still tasted great. Next time, I won't let it get so soft. Also, I'm going to try low-fat frozen yogurt in place of the ice cream.

I try it at Easter holiday on all my family, and they loved it, I baked five on Easter and they were gone (I was sad). My family kept asking where I got the recipe? I think you should give it a try you won't be sorry
