  • Place tofu in large bowl; mash with potato masher or fork.
  • Add all remaining ingredients except toast; mix well. Cover. Refrigerate at least 30 min.
  • Spread 1/2 cup of the tofu mixture onto each of 4 of the toast slices just before serving; cover with 1 of the remaining toast slices.

Special Extra

Add a few drops hot pepper sauce to the tofu mixture before refrigerating.

Variation

Omit bread. Spoon tofu mixture over torn salad greens.

I used soft tofu, mayo, spicy brown mustard, sweet relish, fresh dill, and a pinch of garlic powder and cajun spice. It turned out delicious. It's good for sandwiches but also went really well with crackers as a snack.

My husband said "I sure hope there's more, because I want another one!" I changed the recipe a little bit, added some yellow onion, banana peppers, little bit of light Italian dressing...SO GOOD!

Rated 4 out of 5 by from the texture took a little time to get used to. the texture took a little time to get used to. but this was also my first time to eat tofu. overall i was very pleased with the recipe. i added a slice of tomato to it. it was wonderful. the tofu sandwich was also very filling.
