  • Heat oven to 400°F.
  • Place bread slices in single layer on baking sheet. Bake 3 to 4 min. on each side or until toasted on both sides. Rub with garlic. Cool.
  • Spread toast slices with reduced-fat cream cheese; top with tomatoes and onions.
  • Whisk vinegar, oil, sugar and pepper until blended; drizzle over toast slices. Top with basil.

Special Equipment Needed


Substitute 3/4 cup thin roasted red pepper strips for the halved tomatoes.

Rated 4 out of 5 by from Easy quick appetizer I use French baguette or Ciabatta bread. Both have great texture and will hold up for party appetizer. Cut the cherry tomatoes in 1/4's (easier to eat). If you want to make it really easy use Balsamic" Glaze" for drizzle (in bottle and thicker w/sweetness) and do not go thru the steps of "oil, vinegar, sugar", really delicious and I use it for many other toppings, i.e. fresh sliced tomato and cucumber salad, top w/basil, etc. You will find in most grocery stores wherever they have Balsamic Vinegar. I do marinate the cherry tomatoes and onions (at room temperature) w/a little Splenda or fine sugar (brings out the natural sweetness and cuts the harsh onion sharpness. Top the Bruschetta w/anything else you like (crisp bacon bacon, fresh grated parmesan cheese, etc.) Bon Appetit!

I really combined what I thought were the best parts of a few recipes -- this being one of them. I use shredded mozzerella instead of cream cheese. And chop up Roma tomatoes instead of using cherry tomatoes. I use fresh basil only.
