Tomato Bruschetta Dijon

Tomatoes, green onions and olives are tossed with a Dijon vinaigrette and then spooned over toasted French bread slices for an enticing take on bruschetta.

What You Need

Tbsp. GREY POUPON Dijon Mustard

Tbsp. olive oil

Tbsp. red wine vinegar

cups chopped tomatoes

1/2

cup sliced green onions

1/2

cup sliced black olives

Baguette-style French bread, sliced, toasted

Make It

MIX mustard, oil and vinegar with wire whisk until well blended. Toss tomatoes, onions and olives in large bowl. Add mustard mixture; mix lightly. Cover.

REFRIGERATE at least 30 minutes to allow flavors to blend.

SPOON 1 Tbsp. of the tomato mixture onto each toast slice. Serve immediately.

I created this recipe as is and then for those who may choose to have a meat with it I added turkey slices first then the remainder of the toppings and everyone truly enjoyed it. Some may want to replace the mustard with miracle whip for those who have not acquired the Dijon taste. Over all either way it is a great recipe.

A friend made this and it was very tasty! I don't usually like green olives but the dijon gave it a french flair that I liked...she used country dijon which is spicier than Grey Poupon, and thus a tiny bit overpowering for this recipe, but it was still very yummy :)
