Tomato 'N Rice Chicken Bake

It only takes 15 minutes to put together, but this tasty chicken bake has a pretty festive look to it—thanks to diced tomatoes, rice and broccoli florets.

What You Need

cups  instant white rice, uncooked
1/4
cup  KRAFT Mayo Homestyle Real Mayonnaise
1-1/2
cups  boiling water
4
small  boneless skinless chicken breasts (1 lb.)

pkt.  SHAKE 'N BAKE Chicken Coating Mix
1
can  (14-1/2 oz.) diced tomatoes, undrained
2
cups  frozen broccoli florets
3/4
cup  KRAFT Shredded Cheddar & Monterey Jack Cheeses

Make It

HEAT oven to 400°F.

COMBINE rice, mayo and boiling water in 8-inch square baking dish; cover. Let stand 5 min. Meanwhile, coat chicken with coating mix as directed on package.

ADD tomatoes to rice mixture; mix well. Top with broccoli and chicken.

BAKE 45 min. or until chicken is done (165°F). Sprinkle with cheese; bake 5 min. or until melted.
