  • Cook and stir onions in hot oil in large skillet until crisp-tender.
  • Add tomatoes, carrots and broth; mix well. Bring to boil on medium-high heat; simmer on medium-low 15 min. or until vegetables are tender, stirring occasionally.
  • Blend vegetable mixture, in small batches; in blender until smooth, blending dressing and chipotle peppers with the last batch. Serve warm or chilled.

I plan out my menus for the week before going to the store and 90% of the recipes are from this website or the magazine. I love it! However, this soup was horrible. I LOVE spicy things so I thought this would be perfect. But, the chipolte in this just ruined it. Sorry! I won't be trying this again.

Rated 4 out of 5 by from super fast & easy. super fast & easy. the chipotle pepper is VERY spicy--use less if you want it not as hot. i didn't like the 1000 island dressing though---next time will just add half & half. i like chunky soups so i will also put in extra cooked chopped carrots.

Rated 3 out of 5 by from Be careful with the chipotle! Be careful with the chipotle!! I had to add a whole third can of diced tomatoes to even out some of the heat. Even then it was pretty spicy. Otherwise, the soup was pretty good. I'd like it to be smoother, but still tasty.

Still quite spicy, so beware, but very tasty. Good over noodles or rice. We'll probably use about half the chipotle called for next time.
