How to Grill Vegetables

Grease grill rack before heating grill to medium-high heat. Grill vegetables until crisp-tender, turning occasionally. Or, place the vegetables in a greased grill basket before grilling.

How to Grill Zucchini

Preheat greased grill to medium-high heat. Cut zucchini lengthwise into quarters. If zucchini is long, cut each quarter into shorter lengths. Brush with oil. Grill zucchini 5 to 10 minutes or until tender, turning occasionally with long-handled grill tongs.

How to Purchase Eggplant

Eggplants with fewer seeds have the best flavor since they tend to be less bitter tasting. When purchasing, chose small- or medium-sized eggplants since large overmature eggplants are more likely to contain more seeds. Avoid eggplants that are too soft.

How to Grill the Eggplant

Cut and discard ends from small eggplant. Cut into 3/8-inch-thick slices. Brush evenly with olive oil. Grill on high heat 4 to 5 min. or until tender. Remove from grill; place on large sheet of foil. Wrap eggplant with foil. Let stand 10 min. or until centers of eggplant slices are tender.

How to Use the Remaining Grilled Eggplant

Cool, then refrigerate leftover eggplant up to 24 hours. Then, add to your favorite soup, or add to other seasoned cooked fresh vegetables for a tasty side dish.
