  • Cook potatoes in large saucepan of boiling water 10 to 15 min. or until tender; drain. Place potatoes in large bowl. Add sour cream, reduced-fat cream cheese and onion powder; mash until creamy.
  • Spoon into 2-qt. casserole sprayed with cooking spray. Refrigerate up to 2 days. Remove from refrigerator 30 min. before baking.
  • Heat oven to 350°F. Bake potatoes 1 hour or until heated through. Sprinkle with bacon and onions.

Make Ahead

Assemble recipe as directed but do not sprinkle with bacon and onions; cover with heavy-duty foil. Freeze up to 1 month. When ready to serve, thaw overnight in refrigerator. Bake, covered, 1 hour or until heated through, uncovering the last 10 min. Sprinkle with bacon and onions.

Variation

Prepare using any savory flavor of PHILADELPHIA Cream Cheese Spread to season the potatoes. Or, roast fresh garlic and mix with the potatoes before baking for creamy garlic mashed potatoes.

Variation

Sprinkle baked casserole with OSCAR MAYER Real Bacon Bits, chopped chives and/or KRAFT Grated Parmesan Cheese instead of the crumbled cooked bacon and/or sliced green onions.

This was a great alternative to traditional mash potatoes which are a pain to make, as they have to be made at the very last minute while you're trying to get everything else done at X-mas or Thanksgiving. I added garlic powder to this and also mixed in some grated cheddar cheese and topped with cheddar towards the end of the cooking time (I did not add the bacon/chives as directed, and it was great). To add some moisture and taste, as I had premade/refrigerated this before baking, I also added a few drops of some heavy whipping cream before placing it in the oven. Everyone raved about this--it will definitely replace mashed potatoes at holiday gatherings from now on.

I didn't add the chopped onions though because I felt the potatoes had just enough of an onion taste and didn't want to make them to strong. I also put a stick of light butter in it and I sprinkled a whole pack of sharp cheddar cheese on top and then put the crumbled bacon on. I also put more bacon on then they asked about 7 strips on crumbled bacon. I made it the day before so all I had to do was pop it in the oven. I will make this again!

I made these because they were make-ahead and actually made them the day before I had my Christmas dinner. Tasting them the day I prepared them, they were DELICIOUS. When I heated them the next day, though, they dried out a lot. I added milk per recommendations on here, but if you are making them ahead be sure to add more milk than you think you should before putting them in the oven. I did eat all the leftovers- just added a lot of milk!

Put it in my oven on time bake before going to church and it was done when we got home. My two grown sons loved it. They said it tasted like a loaded baked potato. They are easy to make and takes the stress out of making mashed potatos and the cleaning on Thanksgiving Day. The only thing that I do differently is add Onion & Chive Sour Cream for more flavor. Its a great recipe!

Instead of onion salt, I use Beaumonde, garlic salt, and dill weed mixed into the potato mixture. My family and friends love it and I make it often. Will try your version soon and hope for the same results.

I have made this 4 times and it's a winner each time. If you have the older children peel the potatoes it makes it even better all the while giving them something to do. It's wonderful!
