  • Mix mayo, cilantro, lime zest and juice, garlic powder and red pepper in large bowl until well blended.
  • Add shrimp and oranges; toss to coat. Cover and refrigerate at least 2 hours or until chilled.
  • Place spinach leaves on large platter or 4 individual salad plates; top evenly with shrimp mixture. Serve with crackers.

Rated 3 out of 5 by from I made this dish with out the orange and it was pretty good. I made this dish with out the orange and it was pretty good. However, I would recomend putting the lime dressing directly on the salad and not the shrimp. It seemed to stick more to the shrimp and not spread to the salad. I would also let the shrimp soak in lime juice (for extra flavor) while letting the lime dressing sit for a minimum of 2 hrs.

I used dried parsley instead of cilantro (we do not get fresh herbs where I live) and I added more lime juice, it is really refreshing!
