This was pretty good...I added a half cup each of celery and red onion and they both added well to the mixture. I also used some salt, pepper and a store bought greek seasoning mixture to add a little more balance to the lightness of taste of the cucumbers and tomatoes.
I almost wonder if a touch of white or balsamic vinegar would mix well...
