I made this for dinner for my husband and I. It was a nice refreshing salad for the hot summer evenings, while I enjoyed it my husband did not. He is a meat and potatoes kinda guy. I would still make it again. I used feta for the mozzarella....yum!!
Excellent! This is now one of my favorite low-cal, healthy go-to lunch meals I prepare for work. It not only tastes great but also looks great!
