Refrigerate or freeze any leftover muffins.
The secret to perfect tender muffins is in the lumps. Do not vigorously stir muffin batter until it is smooth or the muffins will be tough with pointed tops.
Prepare batter from 1 pkg. (8-1/2 oz.) corn muffin mix as directed on package instead of preparing the homemade batter. Cut 12 slices OSCAR MAYER Turkey Bacon into 1/4-inch pieces. Add to muffin batter; stir just until blended. Spoon into muffin pan and bake as directed on muffin package. Refrigerate or freeze leftover muffins. Makes 12 servings.

If the thought of bacon inside a muffin doesn't sound appetizing to you, don't make this. I gave this two stars instead of one only because the muffin part is good. I'd make the muffins, but leave out the bacon next time.
After reading the comments, I substituted 1/4 cup corn meal for 1/4 cup of the flour and added 1/4 cup fat free cheddar cheese. Yum. Next time I might cut the honey down to 1/4 cup (it wasn't too sweet, but it was a rather strange mix of flavors) and try adding some pepper or maybe basil.
Just wondering, is the bacon supposed to be cooked first?
