I made this salad with chicken instead of turkey, and it was good. I imagine that turkey would be great too. Six cups of chicken or turkey is about the same as two pounds. And I have a small family, so I used only a pound and halfed the recipe. It made plenty of salad to make at least a dozen full sandwiches. Now, if I were making this as a side dish for a barbecue rather than for sandwiches, I would probably use the full recipe. My family loved this so much that all they ate for days was chicken egg salad sandwiches, and they normally hate eating leftovers.
