  • Heat skillet sprayed with cooking spray on medium heat. Add eggplant; cook 5 min. on each side or until tender and lightly browned on both sides.
  • Spread toast slices with dressing.
  • Fill with lettuce, turkey, eggplant and tomatoes.

Special Extra

For added flavor, stir a dash of Italian seasoning into the dressing before spreading onto toast slices. For added crunch and flavor, add thinly sliced red onions to sandwich filling.

Variation

Substitute 1 zucchini, sliced lengthwise, for the eggplant. Cook in 1 tsp. oil 3 min. on each side or until tender and lightly browned on both sides. Use as directed.

    I used a nice multi-grain whole wheat bread, then I added a little homemade pesto to the light mayo. Tastier and healthier than a BLT.
