Easy family size turkey empanadas "made simple" with refrigerated pie crust dough.

What You Need

Tbsp. KRAFT Zesty Italian Dressing

pkg. (16 oz.) frozen LOUIS RICH Pure Ground Turkey, thawed

onion, chopped

carrot, peeled, finely chopped

cloves garlic, minced

can (15 oz.) great Northern beans, drained, rinsed

cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese

cup finely chopped cilantro

1/2

tsp. ground red pepper

pkg. (15 oz.) ready-to-use refrigerated pie crusts (2 crusts)

Make It

HEAT dressing in large skillet on medium-high heat. Add turkey, onions, carrots and garlic; cook 5 to 7 min. or until turkey is cooked through, stirring occasionally. Remove from heat. Stir in beans, cheese, cilantro and pepper; set aside.

PREHEAT oven to 400ºF. Unroll 1 of the pie crusts on large baking sheet sprayed with cooking spray. Spread half of the turkey mixture onto half of the crust to within 1 inch of edges. Fold crust in half to enclose filling. Fold over 1/2-inch-wide rim around pastry to seal all edges. Repeat with remaining pie crust and filling. Cut several slits in top of each to permit steam to escape.

BAKE 25 min. or until golden brown. Cut each empanada into four wedges to serve.

Note

Serve one of the empanadas for dinner. Cool remaining empanada, then cover and refrigerate until ready to serve the next day for lunch. Reheat in microwave before serving.

Variation

Substitute 2 chopped serrano chiles for the ground red pepper.

We made this last night, it was absolutely delicious! I can't wait to eat leftovers! I did add some green peppers, and it turned out pretty well. I'm thinking next time, we'll add Rotel, mushrooms, and green peppers. Only thing, make sure you drain the meat mix really well before putting it in the pie crust, and don't over stuff it!

This was delicious! I added frozen corn because I had extra- you could really add any veggies. I thought this might be bland but it was tasty and my husband went back for seconds!

This was excellent! I added some cumin, green and red peppers chopped. It was quite tasty. I also used Mexican cheese and topped with sour cream. Yum!

Yum! Had to change just a little since I didn't have a can of beans (used handful of green peas instead) and used my own pie crust recipe. My husband liked it but requested the beans next time. Will probably use refrigerated pie crust to save prep time.
