  • Heat oven to 350ºF.
  • Spread 1/2 cup enchilada sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray. Combine 1/2 cup of the remaining enchilada sauce with turkey, 1/2 cup cheese and 1/4 cup onions.
  • Spoon 1/4 cup turkey mixture down center of each tortilla; roll up. Place, seam-sides down, in prepared dish; top with remaining enchilada sauce and cheese. Cover.
  • Bake 30 min. or until cheese is melted, uncovering for the last 5 min. Meanwhile, combine tomatoes, remaining onions, cilantro and dressing.
  • Top enchiladas with tomato mixture before serving.

Prepare using shredded cooked pork.

I added a can of green chilies and a couple of finely chopped jalapenos from our garden to the turkey mix as well as the tomato mix. My husband went in for seconds and said he can't wait to eat the leftovers as we're frozen in for the weekend. Love your site and the newsletters! Keep up the good work!

I made it with stir fried chicken breast pieces and followed the recipe as stated but added sliced black olives to the topping. I served it with my home-made Mexican rice. Great tasting, easy to make and everyone loved it. What more can you ask for? Just what you want in a recipe! It would also be great with some black beans in the filling and will try adding that for a change-up next time.

My family and I either really don't like enchiladas or the the enchilada sauce I picked up from the store was just plain gross (I'm leaning towards the latter). I think the recipe calls for far too much sauce and I was able to make a double recipe with all the filling.
