Made this tonight with ingredients I had on hand, since we're ICED in here in Dallas tonight. I added a can of green chilies and a couple of finely chopped jalapenos from our garden to the turkey mix as well as the tomato mix. My husband went in for seconds and said he can't wait to eat the leftovers as we're frozen in for the weekend. Love your site and the newsletters! Keep up the good work!
Easiest enchilada recipe I have ever made. I made it with stir fried chicken breast pieces and followed the recipe as stated but added sliced black olives to the topping. I served it with my home-made Mexican rice. Great tasting, easy to make and everyone loved it. What more can you ask for? Just what you want in a recipe! It would also be great with some black beans in the filling and will try adding that for a change-up next time.
