Prepare as directed, using one of the following flavor options: Turkey Waldorf Sandwiches: Substitute 4 toasted slices cinnamon-raisin bread for 2 of the lettuce leaves. Cover 2 of the toast slices with lettuce; top with turkey, chilled fruit mixture and remaining toast slices. Makes 2 servings, one sandwich each. Open-Face Turkey Waldorf Sandwiches: Substitute 2 toasted slices cinnamon-raisin bread for 2 of the lettuce leaves. Cover toast slices with lettuce; top with turkey and chilled fruit mixture. Sprinkle lightly with ground cinnamon. Makes 2 servings, one open-face sandwich each.
