What You Need

1
small boneless skinless chicken breast half (4 oz.), cooked, finely chopped (about 3/4 cup)
1/4
cup BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream

 green onions, finely chopped

Tbsp. finely chopped roasted red peppers
1
tsp. grated lemon zest
1/2
tsp. chopped fresh rosemary

 TRISCUIT Cracked Pepper & Olive Oil Crackers

 baby arugula leaves

Make It

COMBINE all ingredients except crackers and arugula; cover.

REFRIGERATE at least 1 hour.

TOP each cracker with 1 arugula leaf and 2 tsp. of the chicken mixture just before serving.

Substitute
Prepare as directed, substituting 2 small marinated sun-dried tomatoes, finely chopped, for the roasted red peppers.

Substitute 1/4 tsp. dried rosemary leaves, crushed, for the 1/2 tsp. chopped fresh rosemary.

Prepare as directed, substituting 1/4 cup KRAFT FREE Peppercorn Ranch Dressing for the sour cream.
