  • Heat oven to 400ºF.
  • Prick potatoes in several places with fork. Bake 1 hour or until tender. Reduce oven temperature to 350°F.
  • Cut thin slice off top of each potato. Discard tops; scoop out centers, leaving 1/8-inch-thick shells. Mash potatoes. Add dressing, sour cream and onions; mix well. Spoon into shells; top with VELVEETA. Place in shallow baking dish.
  • Bake 20 min. or until heated through.

Instead of ranch and sour cream I added onion dip (the white not brown) bacon pieces, shredded cheddar cheese, butter, milk, and salt and pepper. I also made it in the microwave.( alot faster!!) When put back into the shells I topped with add. bacon, cheese and added some chives on top and micro. to melt!! Wonderful!!!!

Recipe was easy to make.Instead of using Kraft ranch dressing,Breakstone's sour cream,Velveeta,I used what I had on hand.Regardless,of me not using kraft ranch dressing,Breakstone's sour cream,the Velveeta cheese the recipe itself was quite yummy.This recipe a keeper.Thanks!

Although it was easy to make, it was quite time consuming - two hours and fifteen minutes to make. Of course that included an hour of baking time. EXCELLENT!!!!

Rated 3 out of 5 by from It's good, but I put carrots and zucchini in with the potatoe mush. It's good, but I put carrots and zucchini in with the potatoe mush. Then put shredded cheddar cheese on top, instead of Velveeta. Superb, My Grandfather and Dad even liked them and they are not big potatoe eaters. Freezes well too!

I don't cook very often and when I ventured into the kitchen, this recipe was by far the best choice I made. It's a new spin on the regular baked (or mashed potatoes) and served with steak, even my picky step-dad raved about them!

Rated 4 out of 5 by from Good-bye regular baked potatoes! Good-bye regular baked potatoes! These were delicious and easy to make. I skipped the ranch dressing and just added bacon bits to the sour cream/potato mixture and topped with shredded cheese. Great with steak!
