  • Microwave chocolate and 1/4 cup cream in large microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. Cool 20 min. or until at room temperature, stirring occasionally.
  • Beat remaining cream in medium bowl with mixer until soft peaks form. (Do not overbeat.) Add half the whipped cream to chocolate mixture; stir with whisk until well blended. Stir in remaining whipped cream. Spoon into 6 dessert dishes.
  • Refrigerate 2 hours

The butterscotch chips make the best mousse. My room mate is allergic to chocolate and he just loves the butterscotch version I make.

I used the mousse recipe to top my 8 inch baked cheese cake, I served with sweetened strawberries. The mousse added height to my already tall cheesecake and it was exquisite. People could't beleive it made it Double heaven in a pan!

I broke up chocolate covered graham crackers and topped with strawberries. It was very good and my kids aproved.
