  • Cook pasta as directed on package. Meanwhile, place vegetables in large colander.
  • Pour cooked pasta and the pasta cooking water over vegetables; drain well. Place in large bowl.
  • Add dressing; toss to coat. Serve immediately. Or, cover and refrigerate until ready to serve.

Serving Suggestion

This makes a great brown-bag lunch when paired with fresh fruit and fat-free milk.

Variation

Prepare as directed, using prepared GOOD SEASONS Italian Dressing & Recipe Mix or KRAFT Classic Caesar Dressing.

I sauteed the veggies in olive oil, used the Garlic Herb Version of Good Seasons, and also mixed in a 1/2 a cube of lowfat cream cheese to make it creamier! Topped it off w/ a sprinkle of real parmesan cheese! It was a hit!

I doubled the recipe and used the Balsamic Dressing mix. The only thing I would do different next time is reduce the amount of carrots. Good choice!

I doubled the recipe and also added 1/2 c. lite mayo to make a creamy Italian dressing. Would be a great meal in itself by added cubed chicken or turkey.

Here's another variation: Same dressing with broccoli florets, grape or cherry tomatoes (halved), green onions, small cheddar cubes. Toss in a few toasted chopped walnuts before serving.

Rated 4 out of 5 by from I made this salad for our Super Bowl party. I made this salad for our Super Bowl party. It was a hit. I added cauliflower and used a six-cheese tortellini. The recipe easily doubles and it packs up great for lunches.
