  • Brown meat in large skillet on medium-high heat; drain.
  • Add chili, tomatoes and water; stir. Bring to boil.
  • Stir in rice and VELVEETA; cover. Remove from heat. Let stand 5 minutes. Stir until VELVEETA is completely melted.

Substitute

Prepare as directed, using 2% Milk VELVEETA.

Rated 5 out of 5 by from I added fresh chopped cilantro (for more flavor). I added fresh chopped cilantro (for more flavor). Also used Brown Minute Rice instead of white. Added chopped green pepper with the ground beef. Placed mixture in tortillas, rolled them up and baked them with salsa and shredded cheese on top. Delicious with sour cream and cilantro for a garnish!

Rated 4 out of 5 by from Tweaked it a bit! Tweaked it a bit! Needed spice, so I used Rotel tomatoes and chilies undrained instead of plain diced tomatoes. Also added Taco seasoning, on my husbands and mine, for extra flavor. Used 2% Velveeta to reduce fat. Served with Scoops to dip it up with- kinda fun and nacho-like. Everyone enjoyed!

I added some salsa to spice it up a bit and sprinkled mexican blend cheese on top and it was much better. Very filling. When I make it again I will probably substitute chunky salsa doe the canned tomatoes.

Rated 5 out of 5 by from One of my and my boyfriends favorites. One of my and my boyfriends favorites. I add chili powder to it to make it spicier, and serve with dinner rolls. Boyfriend is a bottomless pit, and this fills him up in one big plateful! You definately will have leftovers (unless you have a big family.)

Rated 5 out of 5 by from Wow, so easy...and so good! Wow, so easy...and so good! I did add a can of sliced olives, and it turned out perfect. And the leftovers...(It was SO filling!) were perfect on soft taco shells the next night with some lettuce and salsa for a whole new meal!
