  • Cook chicken and onions in large saucepan sprayed with cooking spray 7 min. or until chicken is done, stirring occasionally. Stir in seasonings; cook and stir 1 min.
  • Add beans, broth and chiles; stir. Bring to boil; simmer on medium-low heat 10 min., stirring occasionally.
  • Stir in VELVEETA; cook until melted, stirring frequently.

Creative Leftovers

Have some leftover turkey? Substitute 3 cups chopped cooked turkey for the cooked fresh chicken.

Variation

For a thicker consistency, mash some of the beans with a fork before adding to chili.

Special Extra

For spicier chili, add 1/2 tsp. ground red pepper (cayenne) along with the cumin and chili powder.

    Have made this a couple times and it's usually a big hit with spicy food fans. I mash the beans up with a potato masher to help give it a thicker chili-like consistency. Is VERY cheesy but that's okay by me!

    Easy to make and very good.

    I liked this recipe but didn't love it. I used rotel tomaotes with chilis in the recipe to give it some depth. It almost felt like I was eating rotel cheese dip as a soup. I will make it again with maybe more tomatoes, more beans and less velveeta.
