What You Need

1/4
cup  lime juice
2
 jalapeño peppers, seeded, finely chopped
1-1/2
lb.  boneless skinless chicken breasts, cut into strips
1/2
cup  sliced onions
1-1/2
cups  sliced green or red bell peppers
1
Tbsp.  oil
1/2
lb.  (8 oz.) 2% Milk VELVEETA®, cut up
1/2
tsp.  ground cumin

 flour tortillas (6 inch), warmed

Make It

MIX lime juice and jalapeno peppers in medium bowl. Add chicken; cover. Refrigerate 30 min. to marinate. Drain chicken, discarding marinade; set chicken aside.

COOK and stir onions and bell peppers in hot oil in large nonstick skillet on medium-high heat 3 min. or until vegetables are crisp-tender. Add chicken; cook 5 to 7 min. or until chicken is cooked through, stirring occasionally. Reduce heat to low. Add VELVEETA Made With 2% Milk and cumin; mix well. Cook until VELVEETA is completely melted, stirring occasionally.

SPOON chicken mixture evenly onto tortillas; roll up or fold tortillas in half.

How to Warm Tortillas
To warm tortillas, stack them on top of each other. Wrap in foil and heat in 350ºF-oven for 10 to 15 min. or just until warmed. Or, wrap loosely in waxed paper and place on microwaveable plate. Microwave on HIGH 15 sec. for every 2 tortillas or just until warmed.
Keeping it Safe
Cutting raw boneless chicken breasts is a slippery task. Make it safer and prevent the knife from slipping by cutting chicken while partially frozen.
Easy Cleanup
Marinate chicken in large resealable plastic bag instead of in the covered bowl. Discard bag and marinade after removing chicken from marinade.
