  • Cook chicken in large nonstick skillet on medium-high heat 2 min. or until no longer pink.
  • Stir in water. Bring to boil. Add rice; cover. Cook on low heat 10 min.
  • Add all remaining ingredients except onions; mix well. Cook 5 min. or until VELVEETA is completely melted, stirring occasionally. Sprinkle with onions.

Substitute

Substitute your favorite frozen vegetable, such as asparagus, sugar snap peas or mixed vegetables, for the green beans.

Rated 4 out of 5 by from The velveeta chicken & veg. The velveeta chicken & veg. skillet that I got from this website last year didn't have all of these ingredients and it was really good. I make it often. You cook your chicken in 1/4 c. Italian dressing. When done, add in 2-3 cups brocolli florets, 1 squash sliced, 1 red pepper cut into strips. I pour a little more dressing (couple tbsp.) on top of veggies, cover and let simmer on med heat till veggies are crisp tender. While they're cooking, mix together 2 oz. velveeta and 1 tbsp. milk. Microwave till melted. Pour over. I've also added crumbled bacon and it's good too.

Rated 3 out of 5 by from I thought this recipe was good the first time i made it. I thought this recipe was good the first time i made it. The second time i added a can of cream of chicken soup and and a half of a can of cream of mushroom, and reg mushrooms instead of the peppers. I also only added 2 cups of rice and a little more cheese. Totally made this dish jucier and added flavor. I also added my own seasonings.

There are so many variations that could be done with this recipe, I think shrimp and peas would be great instead of chicken and the beans, maybe add some mushrooms...this is a good basic recipe to build on or leave just as it is.

Rated 5 out of 5 by from Easy to make! Easy to make! I did not follow recipe all the way. I used pasta instead of rice and substituted frozen mixed vegetables. I like spices, so I added some lemon pepper and seasoned salt to the chicken while it cooked along with the garlic powed and black pepper. It was still great!!

Rated 4 out of 5 by from This receipe was very easy to make. This receipe was very easy to make. My family liked this dish a lot. Would certainly do it again. The only change I made was that I used only 2 cups of rice. Was plenty and very delicious.

Rated 3 out of 5 by from Good basic recipe but it needs more seasoning. Good basic recipe but it needs more seasoning. Chicken should be left in larger pieces so that it looks more appetizing. Very small pieces made it too "mushy".
