  • Cook and stir chicken in large skillet sprayed with cooking spray on medium-high heat 4 min. or until chicken is no longer pink.
  • Stir in water. Bring to boil. Add pasta; cook 8 min. or until tender.
  • Add broccoli, VELVEETA and seasonings; stir. Cook 5 min. or until VELVEETA is completely melted, stirring frequently. Stir in tomatoes.

Substitute

Substitute any other small shaped pasta for the rotini.

Make it Easy

Substitute 1 pkg. (16 oz.) frozen vegetable blend for the broccoli, letting the kids choose their favorite variety to use in this one-pot dinner!

Instead of cooking spray, I used a small amount of extra virgin olive oil to cook chicken in, then added,2 14.5oz. cans of Italian stewed tomatos, along with the broccoli, 1 medium zuccini sliced,1/4 cup orange bell pepper,1/4 cup diced red onion.Next time, I will also make the pasta rinse and then add it. Also, I did not use Velveeta, I used Kraft Four Cheese Italian Cheese and added that to the top. Makes a beautiful presentation, very easy and tastes WONDEFUL! I will make this again and again. Rated 2 out of 5 by from I didn't liked this recipe. I didn't liked this recipe. It probably would have been better without the basil. I will try this again using salt & pepper instead. My one picky eater said it was ok, my kid that will eat anything with cheese in it said it wasn't good but if that was all I fixed he would eat it just to keep from starving. My husband said it was ok. I Like I said I will try it again without the basil & I will post again on how that turns out.

I did switch it up and added 1/2 lb. of shrimp with the chicken and also used Italian diced tomatoes instead of regular tomatoes. And one last option for you all. when I cooked my chicken, I used olive oil and on clove of minced garlic to give it just a little extra kick. Serve with a fresh bowl of Romano and feta cheese and ENJOY. My wife called it the "Bomb-diggity!:) hahaha

Next time I make this dish I am changing a few things.. #1 Make everything seperate (not in skillet) and add them all together in the end. #2 Double the amount of cheese added to this dish. The 1st time I made this it was quite dry and needed a lot more cheese so I recommend doubling the cheese. Otherwise great!

I cooked the pasta separately, however, as I was unsure if the water would "drown" the chicken out...then I combined everything together. My family really liked the meal! I will definitely make it again.

Rated 4 out of 5 by from This was very good. This was very good. My whole family liked it. Will definately make this again. I also added fresh garlic into this recipe. I would also suggest maybe a half a tsp of pepper not a full tsp. It did seem to have a little too much pepper but it still tasted really good.

If I made it again, it would be for a potluck where more people could enjoy it and then there wouldn't be any leftovers.

Use 2 3/4 cup chicken broth instead of water. I was out of broccoli so I used 1/2 of a bag of spinach. It was very good. Served with bread sticks.
