  • Cook sausage in large nonstick skillet on medium-high heat 5 min. or until lightly browned, stirring occasionally.
  • Add beans, tomatoes and chili powder; mix well. Stir in water. Bring to boil, stirring occasionally.
  • Stir in rice and VELVEETA; cover. Simmer on low heat 5 to 7 minutes or until rice is tender and most of the water is absorbed.
  • Remove skillet from heat; stir until VELVEETA is completely melted and mixture is well blended.

Made this with a few substitutions: black beans for kidney beans, one can of chopped green chilies and one can of chopped tomatoes for the rotel and since I didn't have instant rice on hand, I cooked white rice separately and stirred in at the end. It was a fantastic hearty meal that my husband loved. I could go either way with the cheese, was good with it, but also would be good without! I will def make this one again!

I have learned with many meals not to mix in uncooked rice, but to just pre-cook it and then mix it in. That it was I did with this recipe. It was so incredable! Everyone just loved it! I just omitted the water and rice from the pot and stired in the cooked rice before simmering. Also, I did not drain the kidney beans either. This is a keeper!

Rated 5 out of 5 by from this is one of the best recipes i've found for red beans and rice! this is one of the best recipes i've found for red beans and rice! even my picky little toddler eats it. it's definitely an easy dish to make, and i love the cheese mixed in! another great way to go is to use chile con queso instead of velveeta! it's just about the same as the velveeta, but it gives it a little more spice. yum!

The rating from 3/21/05 really encouraged me as I searched for a reason of draining and rinsing the kidney beans. I use kidney beans often and have never heard of draining and rinsing them. Rated 5 out of 5 by from I absolutly love this one. I absolutly love this one. I make it almost every week. It is great leftover too. I love the beans, rice, cheese, sausage, and a bit of spice from the Rotell. I am still learning to go easy on the Rotell so it is not too spicy for the kids. Very easy and soo good. Add extra cheese if you like and it is perfect.

Rated 2 out of 5 by from I like this recipe. I like this recipe. I would make it again but precook the rice and add the cheese after that. I had to use 4cups of water to get the rice right and with the cheese added at the same time it made the rice harder to get done. Also I didn't rinse the beans to keep some of the flavor to mix in with the rice.

We add green pepper, onion, garlic and saute with sausage after it has browned a few minutes. Also added Tony's seasoning and Louisiana hot sauce and extra can of beans!!!

Rated 4 out of 5 by from easy to make and good. easy to make and good. I also precooked the rice and I used brown as well as white rice. I also substituted cheddar cheese instead of the Velveeta because I am not a fan of Velveeta cheese. Will definitely make again
