  • Heat oven to 350°F.
  • Cook pasta as directed on package, omitting salt. Meanwhile, crumble sausage into large deep skillet; cook on medium-high heat until evenly browned, stirring occasionally. Drain; return sausage to skillet. Stir in vegetables and pizza sauce; cook 5 to 6 min. or until vegetables are crisp-tender, stirring occasionally.
  • Drain pasta. Add to sausage mixture along with the VELVEETA; mix lightly. Spoon into 13x9-inch baking dish sprayed with cooking spray; sprinkle with Parmesan.
  • Bake 15 to 20 min. or until heated through.

Trim 40 calories and 9g of fat, including 3.5g of sat fat, per serving by preparing with extra-lean ground beef and 2% Milk VELVEETA.

Kid Friendly

Prepare recipe as directed, substituting lean ground beef for the sausage, and 1 cup each shredded carrots and zucchini for the 3 cups sliced zucchini. Also, try using a fun pasta shape, such as wagon wheels.

VELVEETA Sausage and Rice Casserole

Omit pasta. Prepare recipe as directed, adding 1-1/2 cups uncooked instant white rice and 1-1/2 cups water to the sausage mixture along with the VELVEETA. Increase the baking time to 35 to 40 min. or until rice is tender and casserole is heated through. Makes 8 servings.

I would definately make 2-2 1/2 cups pasta...there was too much meat I thought in comparison to pasta. I followed everything else and it was yummy! The italian sausage added a kick of flavor!

My husband despises most things that resemble "healthy" (aka veggies) so the last time I made this I shredded the zucchini and he ate it... and did not even know he was eating it ;). Also I froze it for when we had our baby, it froze great. It is a tad watery when you freeze it but it doesn't effect the taste!

Rated 5 out of 5 by from this was very good! this was very good! I added some red onion and used 1/2 cup of red and 1/2 cup green peppers. I also used some italian blend shredded cheese on top, along with the parmesan. Turned out awesome! Veggies were perfect- not too crisp and not soggy. Will definately make again. The only negative is that the velveeta is very heavy- it is very filling.

Rated 4 out of 5 by from it has been a long time since all 4 of my kids asked for 2nd and then 3rds and STILL cleaned their... it has been a long time since all 4 of my kids asked for 2nd and then 3rds and STILL cleaned their plate. this was good. i did modify it because i live in the middle of nowhere and didnt have all the ingred. i used hamburger meat and did not use zuccini or pepper. i used onion. i will make it like the recipe next time. family LOVED it.

I ended up having to make something else for me and my son becuase the guys ate it all! That means its a keeper! I did make a change and used the full 15oz can of pizza sauce and I only used 2 of the zuccini but the little bite I got was yummy!

I bought the Velveeta shredded in the bag instead of the block. I also substituted white rice for the noodles. Very tastey and cheesy!!! Could almost use half the amount of cheese and it would be enough. Would definatley make this dish again.

I follow the recipe except that I didn't have zucchini on hand, so I add carrots. My husband is not a fan of casseroles, but with this one, he went for seconds. Awesome recipe, defenitely make this again.

Rated 5 out of 5 by from So yummy! So yummy! I used a whole 15oz can of sauce and added onion to the sausage while frying but other than that I followed the recipe. Next time I make it I am going to add some spinach and diced tomatoes for added nutrition. My 2 daughters (age 4 and 3) loved it and cant wait to have it again.
