  • Cook and stir chicken in large nonstick skillet on medium heat 8 to 10 min. or until done.
  • Stir in broth. Bring to boil.
  • Add rice, VELVEETA and broccoli; cover. Remove from heat. Let stand 10 min. Stir until VELVEETA is completely melted and mixture is well blended.

To quick-thaw frozen broccoli, microwave for about half the cooking time specified on the package.

Substitute 2 pkg. (6 oz. each) OSCAR MAYER Deli Fresh Grilled Chicken Breast for the cut-up fresh chicken. Bring broth to boil in large skillet. Add chicken strips, rice, VELVEETA and broccoli; mix well. Continue as directed.

Rated 5 out of 5 by from Super fast, easy and tasty! Super fast, easy and tasty! I don't normally use Velveeta, but this recipe looked good so I decided to try it. I can't believe how easy it was to make! I had no issues with the rice cooking all the way...makes me wonder if those who had issues with it didn't use instant? Another thing that is great about this recipe is that it is very adaptable. I added extra broccoli, and really, you can use any kind of veggies you want...peas, carrots, mixed veggies, etc. I am going to try to adapt it to using long grain brown rice next time I make it, and I WILL be making it again!

Ok so, I thought this would be the perfect recipe for using up cheaper cuts of chicken I had in my freezer. So I took out boneless, skinless thighs, trimmed them up a little (they are a fatty part of the chicken). DON'T EVER DO THIS! The meal would have been really good had I not used the thighs. I followed others advice and cooked the rice in the chicken broth in a pot, threw the broccoli into the microwave until done then added it, added a few spices in the end it all come together nice and tasted good except the chicken I ended up picking it off of my kids plates then they ate the rest down and ask for more rice and broccoli. OH yeah I did add like 3/4c. milk to make it creamier. I will definatly make it again with chicken breast.

Rated 5 out of 5 by from I made this tonight with rigatoni noodles instead of rice and water instead of chicken broth... I made this tonight with rigatoni noodles instead of rice and water instead of chicken broth because I didn't have any chicken broth. It was really good. I would suggest if you use noodles to cook them till they are almost done then add them because I didn't cook them at all before and the chicken and broccoli where a little over cooked. Overall good simple and very fast dinner.

Substitute the chicken broth for 2 cups water and instead of white rice use 1 package Knorr Rice Sides in Chicken Broccoli flavor. Once you add the water and rice just follow the directions on the Knorr package. It has great flavor, super easy to make and even my toddlers enjoyed it and they are the pickiest eaters!

I added a can of 98% fat free cream of chicken soup and a few spices and this came out delicious and very quick! I think some of the comments about the rice not cooking may have been due to the rice/liquid ratio in the original recipe. Adding the soup makes all the difference, it came out creamy and yummy, even my picky 6 year old loved it!

Rated 4 out of 5 by from I modified this quite a bit, but I did use this as my inspiration. I modified this quite a bit, but I did use this as my inspiration. I used regular brown rice, I boiled 1 cup of rice for 25 minutes in 2 cups of chicken broth. I diced the chicken, heated 1 TBS olive oil and browned the chicken with salt, pepper and 1/2 tsp garlic powder for about 5 minutes. I added the chicken to the cooked rice, along with the 1/2 lb of cubed velveeta (I also added 1/2 cup of milk but with how watery mine came out that wasn't necessary to get a creamy texture, I think since I only used half as much rice as the original recipe called for the 1/2 lb of cheese was enough to obtain a creamy texture by itself). I then steamed 4 cups of fresh broccoli and added that to the pot and combined gently. So I ended up with cheesy rice and broccoli but pretty different from the original recipe! :) It's very tasty the way I made it, a light flavor and I love the creamy cheesy flavor the velveeta gives it with the good crunch and hearty flavor of the brown rice.

Rated 3 out of 5 by from Just made this last night. Just made this last night. Left out the brocolli b/c my husband doesn't like brocolli. I did add some seasonings to it (garlic and seasoning salt). Otherwise, I made it just like the recipe said. It was yummy but some of the rice wasn't done. Next time I'll cook the rice in the chicken broth and mix after that.

Make sure you add the rice and broccoli as soon as the broth comes to a boil, or too much liquid will evaporate. Cooking the rice for a longer period of time doesn't do any good if there is not enough liquid to be absorbed. We really enjoyed this dish, especially since it was so quick to fix.
