  • Cook potatoes in boiling water in large saucepan 15 to 20 min. or until tender; drain. Cool 10 min. Mash potatoes until smooth. Add onions, egg and pepper; mix just until blended.
  • Heat oven to 400ºF. Empty coating mix into pie plate. Roll potato mixture into 24 balls, using about 2 Tbsp. for each. Insert 1 VELVEETA cube into center of each ball, completely enclosing VELVEETA. Add, 1 at a time, to coating mix; turn to evenly coat. Place on rimmed baking sheet sprayed with cooking spray.
  • Bake 14 to 16 min. or until heated through. Serve with salsa.

I made this recipe, using some of the modifications suggested by others who had already made it. I used cheddar cheese instead of velveeta, put bacon bits in the potato mix, and left the mashed potatoes to cool overnight in the fridge. I think you could probably use boxed potatoes and not fresh if needed. If I make them again, I would mix some type of cheddar cheese blend with the potatoes as well as bacon bits. I'd add more salt as well. They are delicious with hot sauce. The potatoes are sticky and hard to roll up - a pain to make but good. They were a hit with my family.

Rated 3 out of 5 by from I would make this again but it needs help. I would make this again but it needs help. I added Mrs. Dash, seasalt, Lawry's, real bacon bits. Next time I would use cheddar as the velveeta taste got lost in the poatoes. I did boil and mash these earlier in the day or they would have been real hard to roll warm. . I used the Ranch and Herb shake and bake which gave it real good flavor. Would make as a side dish with meat of some sort but not as a appittizer. I had planned on making these the night of the super bowl but was such a mess over the close game (GO PACK GO) I added the spices and rolled them up the next night and they where fine. Did not use salsa but dipped in ranch dressing.

Rated 5 out of 5 by from I thought these turned out great! I thought these turned out great! I baked my potatoes and put them through a ricer the next day. I added two eggs because it looked like it needed both. Added the green onions and bacon bits (per other reviews). Potatoes always need salt so I added that. Next time I will try and add garlic and onion powder. I kept theVelveeta as that stays creamier compared to cheddar. I used a medium cookie scoop to portion out, added Velveeta and rolled in gluten free crumbs and then actually deep-fried them!

Rated 4 out of 5 by from This was a big hit with the guys on game night! This was a big hit with the guys on game night! They were a bit time consuming but worth it. I made a few tweaks based on previous reviews...added Ranch Dip mix and chopped cooked bacon and used cubed cheddar chunks instead of Velveeta. They weren't as crispy as I would have liked but that could have been because I was anxious to get them out of the oven. I also served them with Ranch dressing. Overall-delicious!

They were delicious, but I had similar problems with the pototoes being too sticky to roll into balls. Perhaps I need to make the potatoes the day before and chill them. I did add salt to the potatoes. I may have also tried to mash the potatoes too soon and added some milk and butter which made them mushy. The recipe made much more and mine were huge!

This is the messiest, and unfortunately least appetizing in taste, recipe that I have made in 20+ years. Terrible! My husband & I both tried one, and then threw the rest away (along with the rest of the mashed potato mixture that was giving me fits!) I'm just grateful I made them only for my family and not guests! Don't make these!

I took the advice of the other reviews and added Lawry's, bacon pieces, and used cheddar rather than Velveeta. I still thought it was missing something. I also made the potatoes ahead of time and let them cool so they were much easier to roll. Not sure if I will make these again. It was alot of work for something that didn't taste terrific.

I followed the recipe and added bacon etc. like other reviewers suggested. Still they were just mashed potatoes. Well finish them off at supper tonight because I **** to waste food
