I made this recipe, using some of the modifications suggested by others who had already made it. I used cheddar cheese instead of velveeta, put bacon bits in the potato mix, and left the mashed potatoes to cool overnight in the fridge. I think you could probably use boxed potatoes and not fresh if needed. If I make them again, I would mix some type of cheddar cheese blend with the potatoes as well as bacon bits. I'd add more salt as well. They are delicious with hot sauce. The potatoes are sticky and hard to roll up - a pain to make but good. They were a hit with my family.
