Pretty good, but a bit heavy on the Velveeta. I would suggest cutting back the amount of cheese to 1/2 pound. You can always add some to the top if you think it needs more. As is, the cheese was pretty much the only thing I could taste.
I made this recipe for Christmas morning and everyone loved it. I made it the day before, used Mexican blend shredded cheese instead of Velveeta and just reheated it. I will definitely make it again.
I like the egg, salsa and sausage combination but not the Velveeta cheese. Never cooked with it before and can't say that I will ever again. Might try this again with cheddar grated in with the egg and definitely more spices, way too bland as written.
