  • Heat oven to 350°F.
  • Cook sausage, onions and peppers in large skillet on medium heat 6 to 8 min. or until sausage is done, stirring occasionally. Drain; return to skillet. Stir in salsa and half the VELVEETA; spread onto bottom of 13x9-inch baking dish sprayed with cooking spray.
  • Whisk eggs and sour cream until well blended; pour over sausage mixture. Top with remaining VEVLEETA.
  • Bake 40 min. or until center is set.

Sausage mixture can be cooked ahead of time; cool then refrigerate up to 24 hours. Reheat before using to assemble and bake casserole as directed.

    Pretty good, but a bit heavy on the Velveeta. I would suggest cutting back the amount of cheese to 1/2 pound. You can always add some to the top if you think it needs more. As is, the cheese was pretty much the only thing I could taste.

    I made this recipe for Christmas morning and everyone loved it. I made it the day before, used Mexican blend shredded cheese instead of Velveeta and just reheated it. I will definitely make it again.

    I like the egg, salsa and sausage combination but not the Velveeta cheese. Never cooked with it before and can't say that I will ever again. Might try this again with cheddar grated in with the egg and definitely more spices, way too bland as written.
