It was all gone by the end and lots of people told me it was yummy. I tried a little bit of it and it was good. I was suprised that the original rotel wasn't that spicy, I think I am going to do again for my family and I know my 3 kids won't have a problem with the very mild spiciness. I served with tositos scoops.

Super easy to make, and it makes A LOT! We were left with quite a bit of this dip (because of the non-spinach eaters), and ended up using the last of it on baked potatoes. Yum!

Everyone was dying to know how to make it. It's so easy too! After I popped it in the microwave, I put it in a mini slow-cooker and throughout the night it got better and better!

Mine turned out a little bland, but I may have added too much spinach since I was trying to halve the recipe. I don't like my dips quite so thick either. Maybe I have been spoiled by the incredibly good spinach dip at one of the local restaurants. ;)

I even added crab meat one time. So easy and so good! It is my #1 appetizer to bring to a party. I like it with tostitos.

It is the only special request I get for bowl games, Super Bowl, etc. The first thing the guys always ask is if I am going to make "that awesome cheese dip"!?! It is always good reheated the next day, too!

I was actually planning to make a spinach artichoke dip, but found this recipe and it looked really quick and easy. It was delicious! Everyone loved it. I made a spinach artichoke dip a few weeks later and it wasn't nearly as good as this recipe.

Rated 5 out of 5 by from Excellent, a great variation from the regular velveeta/rotel dip. Excellent, a great variation from the regular velveeta/rotel dip. I did not drain the rotel, it makes it creamier. I also did not use as much spinach. It was great. Everyone loved it. I am making it again today for another party.
