It was good and made a nice light meal, would switch out the veggies and change it about as it works well. Unlike a regular quiche it shrinks once out of the oven and to me doesn't look quite as pretty as a crusted quiche but the taste was good, a little salty so maybe less soy would be better.
This was a fabulous quiche and I didn't even miss the crust. I liked the nutritional facts for it as well! We enjoyed it for supper.
