  • Spray electric waffle iron with cooking spray. Heat iron to medium heat.
  • Spread bread slices with pesto sauce. Place 1 cheese slice on each of 3 bread slices. Top with mushrooms, spinach and peppers; cover with remaining cheese and bread slices to make 3 sandwiches.
  • Place 1 sandwich on grid of waffle iron; close lid. Cook 2 to 3 min. or until sandwich is golden brown and cheese is melted. Transfer to plate. Repeat with remaining sandwiches.
