  • Preheat oven to 350°F. Place cake mix, dry pudding mix, soda, oil and eggs in large bowl. Beat with electric mixer on low speed just until moistened. Beat on medium speed 2 minutes, scraping side of bowl occasionally. Gently stir in walnuts.
  • Pour batter into greased and floured fluted tube pan or 10-inch tube pan.
  • Bake 40 to 45 minutes or until toothpick inserted near center comes out clean. Cool in pan 10 minutes. Remove cake from pan; cool completely on wire rack. Sprinkle with powdered sugar just before serving.

How to Sprinkle Powdered Sugar

Place sugar in sieve. Tap side of sieve with palm of hand to release sugar.

I've made many variations on the cake-mix-with-pudding bundt cake, but this was one of the best I've tried, with a wonderful nutty flavor. The soda is a bit of extra liquid that makes it really moist -- I forgot to pick up club soda, so I used diet ginger ale I already had and it was fine. Was a big hit at my office this morning, definitely a keeper.

There were around 100 people there with all kinds of desserts, etc. Everyone was asking who made the cake! One little girl ate three pieces and her Mom said she HAD to have the recipe. A note though, in my oven I had to bake it another 20 minutes. EASY!

The original icing for this cake is made with 2 pkgs of dehydrated "Dream Whip" and 1 box of instant pistachio pudding. Make the "Dream Whip" as usual, then blend in the pudding until completely mixed in. Spread on the cooled cake. This keeps the cake moist and tender.

So easy! I just added extra walnuts! The presentation looked beautiful too. I made it using the fluted tube cake pan.

It was delicious. Very moist. My hubby is a picky eater and really enjoyed it. Unfortunately I had no leftovers.

I make it in a loaf pan and ice it with cool whip mixed with pistacio pudding. I then add coconut and chopped walnuts. My family also loves this cake.
