Rated 5 out of 5 by from WOW! WOW!! So unexpectedly wonderful. In fact, a local upscale restaurant serves this, in season, as the salad course. I've had rave reviews every time I serve this. I found a chocolate flavored vinegar at a nearby specialty market and the watermelon salad was wonderful with that flavor as well.

Instead of the mint I added cilantro. It was a huge hit, everyone wanted the recipe. It's so easy and refreshing. Thank you for the idea. This will be a family recipe from now on.

This is an interesting combination of flavors, but I didn't enjoy it as much as plain old refreshing watermelon on its own. In the end, I didn't think it was worth the effort. It's hard to improve on the perfection of a juicy summer watermelon.
