Weeknight Peanut Butter-Soy Chicken Kabobs

It's hard to believe these tasty chicken kabobs are a weeknight-quick dish. But they are—and that includes the Thai-inspired peanut butter-soy marinade.

What You Need

1/4
cup  KRAFT Lite CATALINA Dressing
3
Tbsp.  PLANTERS Creamy Peanut Butter
1
Tbsp.  lite soy sauce
1
lb.  boneless skinless chicken breasts, cut lengthwise into strips
2
Tbsp.  PLANTERS Dry Roasted Peanuts, chopped
1
 green onion, chopped

Make It

MIX first 3 ingredients until blended. Pour over chicken in medium bowl; toss to evenly coat. Refrigerate 10 min.

HEAT broiler. Remove chicken from dressing mixture; discard dressing mixture. Thread chicken onto 8 skewers. Place on rack of broiler pan sprayed with cooking spray.

BROIL, 6 inches from heat, 4 min. on each side or until chicken is done. Top with nuts and onions.

How to Soak Wooden Skewers
If using wooden skewers, soak them in water for at least 10 min. before using. This will help to prevent them from burning when grilling the skewered food.

Turn leftovers into a delicious Asian-inspired salad. Just remove chicken from skewers, chop and add to mixed salad greens along with shredded carrots. Toss with KRAFT Asian Toasted Sesame Dressing just before serving.
