OK, so its not real risotto, but has become one of my go to recipes. Keep shrimp in the freezer or substitute the seafood you have on hand (its really good with scallops), dried mushrooms in the pantry and I always have the rest of the ingredients in the cupboard. My guys say its one of the best quickie dinners I can make.
Oh man, do they love this one! Make it interesting by experimenting with different mushrooms. Leftovers are great to take to work to 'nuke for lunch, however the shrimp will toughen up a little if reheated too long.
I made this with canned mushrooms, and it was fabulous. Made lots of leftovers that warm up well.
