  • Brown meat in large skillet on medium-high heat; drain.
  • Add tomatoes with their liquid, rice, green pepper and onion; stir. Cover. Reduce heat to medium-low; simmer 25 minutes, stirring occasionally.
  • Top with VELVEETA; continue cooking, covered, until VELVEETA is melted.

Substitute

Prepare as directed, using 2% Milk VELVEETA.

Storage Know-How

Store bell peppers in plastic bag in refrigerator up to 1 week. Seeded chopped peppers can be frozen up to 6 months.

Rated 5 out of 5 by from I could tell this recipe needed some creativity. I could tell this recipe needed some creativity. I used TBS. Olive oil while browning meat. Then, I added a handful fresh chopped parsley, green bell pepper, salt, pepper, 1/2 TSP. minced garlic, and TSP. celery salt. I used green onions(Green part & all, instead of onion.) I also used 1 1/2 cans of tomatoes, and 2 cups hot water(for the rice.) Because of this, the meal came out fabulous! It had tons of flavor, and I served it with Krafts Italian pasta salad, and the Parmesan Breadsticks. DELISH! :)

Rated 4 out of 5 by from This is basically a simple Spanish rice recipe. This is basically a simple Spanish rice recipe. The only change I made is adding a little garlic. It has a simple, mild flavor that is tasty. For a stronger flavor I would recommend some chili powder and/or cumin. I liked the recommendation of one reviewer to add okra. Cajun seasoning would be good with okra.

I also include a little minced garlic. Family enjoys this recipe. Will continue to make this recipe in the future. Excellent & Easy!!!

My tomatos did not have much juce so I added a little water, it looked to dry for the rice. My 10 year old ate all and wanted more and she never eats her meat. My family loved it.

Rated 4 out of 5 by from This is a fun and tasty recipe. This is a fun and tasty recipe. You can alter it in so many ways and it still tastes good. I've used shredded cheddar, Mexican Velvetta, celery salt, okra, etc. I also like to use diced tomatos with sauce in it.

I used tomato paste and minced onion along with other spices, and then added water for the moisture. The kids loved it!

It was ok,the next time we cooked it we used hash brown patties instead of rice and piled the other ingredients on top and added swiss and american cheese.Much better with sliced jalapenos also.
