What You Need

lb.  ground beef
1
can  (28 oz.) diced tomatoes, undrained
1
cup  long-grain white rice, uncooked
1
medium  green pepper, chopped
1
small  onion, chopped
1/2
lb.  (8 oz.) VELVEETA®, sliced

Make It

BROWN meat in large skillet on medium-high heat; drain.

ADD tomatoes with their liquid, rice, green pepper and onion; stir. Cover. Reduce heat to medium-low; simmer 25 minutes, stirring occasionally.

TOP with VELVEETA; continue cooking, covered, until VELVEETA is melted.

Store bell peppers in plastic bag in refrigerator up to 1 week. Seeded chopped peppers can be frozen up to 6 months.
Substitute for Chopped Fresh Onion
Keep instant minced onions on hand for those times when you don't have a fresh onion on hand, or are only in need of a small amount of chopped onion. Substitute 1 Tbsp. instant minced onion for each 1/4 cup of chopped fresh onion. For best results, rehydrate the dried onions in a small amount of water before using.
