Storage Know-How

Store bell peppers in plastic bag in refrigerator up to 1 week. Seeded chopped peppers can be frozen up to 6 months.

Substitute for Chopped Fresh Onion

Keep instant minced onions on hand for those times when you don't have a fresh onion on hand, or are only in need of a small amount of chopped onion. Substitute 1 Tbsp. instant minced onion for each 1/4 cup of chopped fresh onion. For best results, rehydrate the dried onions in a small amount of water before using.

This is basically a simple Spanish rice recipe. The only change I made is adding a little garlic. It has a simple, mild flavor that is tasty. For a stronger flavor I would recommend some chili powder and/or cumin. I liked the recommendation of one reviewer to add okra. Cajun seasoning would be good with okra.
