  • Cook potatoes in boiling water in large saucepan 5 min. Meanwhile, cook bacon in large skillet on medium-high heat until crisp. Remove bacon from skillet; drain on paper towels. Discard drippings. Add peppers, tomatoes and onions to skillet; cook and stir on medium heat 3 min.
  • Drain potatoes. Add to skillet; cook 15 min., stirring occasionally.
  • Make 6 small wells in potato mixture. Add 1 egg to each well; top with bacon and cheese. Cover; cook 5 to 8 min. or until eggs are set.

Add small amount of chopped fresh cilantro along with the peppers, tomatoes and onions.

My husband cut the bacon into pieces & cooked them in a cast iron skillet on the grill while I prepared the veggies. When it came time to saute them, we just put butter in the bottom of a skillet. Seasoned everything with salt & pepper and Montreal Steak seasoning. Instead of putting the bacon on top, we mixed it in with the potato mixture. Will make this again, next time I think we'll use sausage and maybe have it for breakfast. It's just fun having breakfast at dinner:o)

I advise seasoning the vegetables and then the tops of the eggs after you drop them in. Also, I really think it would be better if the veggies were sauteed in a little oil. Even with the Pam it stuck to the pan and burned a little and oil would help things crisp up so it wouldn't be as soggy. I made this with ham instead of bacon and with the few changes I made it was a hit! We ate it with ketchip like hash browns. :)

I made this recipe today.This recipe was very easy to make and it was a big hit with all my kids(4). I wasnt sure about the eggs but it turned out really good. I used 4 potatoes, a whole pepper , extra tomatoes and green oninons because of my big family. I cant wait to make it again! I added some buttered french bread and honeydew melon to set the meal.

Next time I would chop the peppers and onions the night before, maybe pre-cook the potatoes and bacon night before also. And I couldn't see whether the eggs had set. So I would arrange the bacon and cheese around the eggs instead of over them next time.

Rated 5 out of 5 by from My husband and I both loved this recipe. My husband and I both loved this recipe. I did not have tomato, so I left that out this time. I also used vidalia onion instead of the green onions. The whole recipe came together great, but I did have to cook it a bit longer at the end to get the eggs to set up. Will definitley be making this again!

Very good and hearty; I love the simplicty of all the traditional breakfast ingredients in one pan. I've also substituted frozen hash browns o'brien for the fresh potatoes and Oscar Mayer's already-cooked bacon, and it sped up the process and still tasted great!

It was so simple to make and tasted fantastic. I would definitely try variations with the recipe - top it with sour cream, salsa, cilantro, use other veggies. It has so much versatility!

Rated 3 out of 5 by from I made this the other night for dinner and it wasn't what I was hoping for. I made this the other night for dinner and it wasn't what I was hoping for. Had a little trouble getting the eggs to set , then it ended up burning at the edges. It was good, though I'll use more seasoning next time. I will try this again.
