  • Heat oven to 325°F.
  • Mix graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min.
  • Beat cream cheese and remaining sugar with mixer until well blended. Add chocolate and extract; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.
  • Bake 45 to 50 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours. Top with COOL WHIP and chopped candy just before serving.

To create an icicle effect on top of cheesecake, spoon COOL WHIP into resealable plastic bag. Cut off one small corner from bottom of bag. Use to squeeze COOL WHIP into soft peaks on top of cheesecake.

Each time I get praised for bringing in such a wonderful treat... then they ask me where I bought it. Anyone close to me knows that I don't - won't - buy any baked goods. If I can't make something, then I will only take wine or something. Anyway. I have slightly altered the recipe be be only a white chocolate cheesecake. 6 oz of the chocolate in the cake, and then I melt another 2 on the top instead of the whipped cream. I must have given this recipe to at least 50 people. I will be making this cake forever. My kids kids will be making it :)

It was incredibly yummy!!! We upped the peppermint extract to 3/4 tsp. The store was out of white Baker's chocolate, so we used white chocolate chips instead. The recipe calls for 4 squares of chocolate, but we used 6 oz. of white chocolate chips. We iced it with Cool Whip and left it plain on top. Everyone LOVED it....... This is now my favorite cheesecake in the world!!! Thanks, Kraft!!!

Rated 4 out of 5 by from This recipe made major waves at my in law's Thanksgiving party. This recipe made major waves at my in law's Thanksgiving party. Most everyone found something to love, the kids liked the crunched up candy canes, the adults the smooth cheesecake, and the little ones the light whipped cream topping that was perfect for smearing! ;o) Next time though, I plan on substituting vanilla for the peppermint extract, as the extract created a little *too* much candy cane flavor. Overall it was a great cheesecake to take to a party.

Rated 4 out of 5 by from Good, simple cheesecake. Good, simple cheesecake. Won't bowl anyone over but doesn't take two years in the kitchen either! I did not use the cool whip because I forgot to buy it, but just sprinkled the candy canes right onto the cake after baking. I also put some melt-in-your-mouth (not hard) candy mints on top as decoration. Went over well at a Christmas party. I did not find the peppermint or white chocolate flavours strong at all - just a plain, tasty cheesecake.

Instead of one large cake, I made mini individual cheesecakes (mini-cupcake pan). Bake time for that was 7 minutes. I could not find the white Baker's chocolate, so I used white chocolate chipes instead. Also, all the grocery stores I went to were out of peppermint extract, so I crushed 4 candy canes (very finely) and used that. Definitely a keeper--and will be made again!

Although the cheesecake did not taste pepperminty, it is still a good cheesecake recipe. Next time I will use at lease double the recommended amount of peppermint extract. Also, rather than making the icicles out of cool whip, I covered the outside rim with white chocolate chips. Note: Be sure to put the candy cane pieces on just before serving otherwise they will fuse together and make cutting the cake very difficult.

Rated 5 out of 5 by from Sooooo good! Sooooo good! I am not a cheesecake person, but I made the Kraft pumpkin swirl cheesecake for thanksgiving and loved it. I decided to try this for Christmas. I made this for my work party and it was a big hit! I did not use the cool whip, and I used chocolate graham crackers. I also took about a third of the batter and added red food coloring. Then I swirled it in for a marbled look. I think it added some fun!

THE COMPLIMENTS I RECIEVED ON THIS WERE FANTASIC. IN FACT MY HUSBAND DOESN'T LIKE CHEESE CAKE, HE TRIED THIS AND SAID HE WOULD EAT IT ANYTIME THAT I MADE IT. ONE OF THE WOMEN AT THE HOLIDAY PARTY I TOOK THIS TO WAS GOING TO MAKE IT FOR ANOTHER PARTY AND NOW THAT SHE HAS TRIED SHE CAN'T WAIT TO MAKE FOR HER PARTY.
