  • Heat oven to 325°F.
  • Beat butter, 1/4 cup sugar and 1/2 tsp. vanilla in small bowl with mixer until light and fluffy. Gradually beat in flour until well blended; press onto bottom of 9-inch springform pan. Prick with fork. Bake 25 min. or until edge is lightly browned.
  • Beat cream cheese, remaining sugar and vanilla in large bowl with mixer until well blended. Add chocolate; mix well. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour over crust.
  • Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours. Top with raspberries just before serving.

Prepare as directed, stirring 3/4 cup chopped PLANTERS Macadamias into the batter before pouring over crust and baking as directed.

Substitute 1-1/2 cups soft coconut macaroon cookie crumbs (Kosher for Passover) and 2 Tbsp. margarine, melted, for the crust ingredients. Mix cookie crumbs and margarine; press firmly onto bottom of greased 9-inch springform pan. (Do not prick with fork or prebake crust.) Continue as directed for filling and baking.

Rated 5 out of 5 by from WOW! WOW! This is some GOOD cheesecake!! I decided to use 2 graham cracker crusts instead, and it came out totally fine. I didnt cook them for as long as the recipe states, I rotated them several times and cooked them with a water bath because I dont like over-done, dry and cracked cheesecake. I thought it was really easy to make and boy, was it rich. Not too sweet, but you can really taste the white chocolate in it! SUPER GREAT CHEESECAKE!!

Rated 5 out of 5 by from Mmmmm....Mmmmmmm good! Mmmmm....Mmmmmmm good! Once you have all the ingredients its very easy to put together. The only mistake I made was setting the temperature to 325 instead of 300 as I baked in a dark pan. It still turned out great, but the cake came out golden brown around the edges unlike the pale brown in the picture and the cake had a crack in it because of the high heat. The crust also came out slightly more crispy than its supposed to. But it still tasted awesome and looked beautiful.

I really dig the shortbread crust, which is a nice change from the usual graham cracker one...the only thing I did differently was to add, right before baking, several spoonfuls of semi-melted raspberry preserves (seedless) and swirl them around a little in the batter. It was absolutely delicious and my whole family loved, loved, LOVED it. Definitely will make again sometime.

Rated 5 out of 5 by from My very first ever cheesecake! My very first ever cheesecake!! SO easy and SO delish, follow the recipe exact and yours will turn out awesome too! I should have left it in the fridge probably overnight the inside was a litte bit soft but OH so delish! LOVED the cookie/shortbread crust!! I baked mine for 60 min and the inside center about a 2 inch ring was jiggly when I took it out of the oven. I WILL MAKE IT OVER AND OVER!!!! I drizzled with white choc ganache.

I did have some shortbread cookie dough in the freezer that I used for the crust. The next time I make this I plan to add some macadamine nuts to the crust. This is SUPERB and a must to make!

The cheesecake itself was expensive to make and wasn't as white chocolately as I would have liked or thought. Overall there are better cheesecake recipes which are easier and less expensive to make.
