What You Need

1/4
cup olive oil

env. GOOD SEASONS Italian or Garlic & Herb Dressing Mix

large roasting chicken (6 lb.)

Make It

HEAT oven to 350°F.

MIX oil and dressing mix; reserve 2 Tbsp. Brush remaining oil mixture both under the chicken skin and onto the outside surface of the chicken.

PLACE chicken on rack in roasting pan.

BAKE 1-1/4 to 1-1/2 hours or until chicken is done (165°F), brushing occasionally with reserved oil mixture.

Serving Suggestion
Serve this juicy chicken with mashed sweet potatoes and a steamed vegetable for a delicious meal.
Substitute
Substitute 1 cut-up broiler-fryer chicken (3 to 3-1/2 lb.) for the roasting chicken. Bake at 350°F for 50 min. or until chicken is done. Makes 5 servings.
Keeping it Safe
Be sure to use a clean pastry brush when brushing chicken the 2nd time. Or, wash brush in hot soapy water.
