  • Heat oven to 350°F.
  • Mix oil and dressing mix; reserve 2 Tbsp. Brush remaining oil mixture both under the chicken skin and onto the outside surface of the chicken.
  • Place chicken on rack in roasting pan.
  • Bake 1-1/4 to 1-1/2 hours or until chicken is done (165°F), brushing occasionally with reserved oil mixture.

Serving Suggestion

Serve this juicy chicken with mashed sweet potatoes and a steamed vegetable for a delicious meal.

Substitute

Substitute 1 cut-up broiler-fryer chicken (3 to 3-1/2 lb.) for the roasting chicken. Bake at 350°F for 50 min. or until chicken is done. Makes 5 servings.

Keeping it Safe

Be sure to use a clean pastry brush when brushing chicken the 2nd time. Or, wash brush in hot soapy water.

These was Superd Recipe. My Husband ask me who coming to dinner tonight, I said we haven your brother and sister-in law over. they just Love the food. I first marinated the chicken first in olive oil and the season over night with some onions and garlic cloves under the skin and the taste was out of this world. And I cook mine on my rotisserie grill and it was soo good. And i would cook this again and again.

Maybe a third of a cup of oil would help stretch the baste. Being retired I do the cooking five days a week and this recipe really is simple and easy to clean up aferward. Thanks, Bob in Jupiter, Fl.

Rated 5 out of 5 by from This is the easiest and best whole chicken recipe I have ever made. This is the easiest and best whole chicken recipe I have ever made. The family asks for it all the time! The only change is I rub the entire chicken with about 1/4 of the dry mixture and then put a teaspoon of roasted garlic in to the cavity of the chicken before placing it in the roaster pan.

My husband loved it and my 2 year old ate half of it herself, saying "good chicken mommy" after every bite. It was great the next day cold on a salad! I followed the suggestions of adding lemons and garlic. Will definately make again!

I made a "fancy" chicken that required basting and turning and separate spices, and wine, etc., right next to this recipe to compare the two. The whole family actually prefered this chicken...5 stars for the simplicity and taste. I added onion and garlic in the chicken.

I found that if I added some minced garlic and italian dressing to the olive oil mix it didn't spit as much, also I added some water to the bottom of the roaster and it was super moist but had a crispy skin. This was my second time making it and it is very flavourful!

Rated 5 out of 5 by from We loved this. We loved this. I put half of the italian dressing right from the package, dry, under the skin. I then added olive oil to the rest and brushed the chicken. Very flavorful chicken. The potatoes picked up the flavor and were wonderful. We ate this the next day too.
